Simple lasagna beef recipe

Yield: 8 servings

What you need:

6 uncooked lasagna noodles

1 pound lean ground beef

1 (15-ounce) container ricotta cheese

4 cups tomato-basil pasta sauce

1/4 cup hot water

2 1/2 cups (10 ounces) shredded mozzarella cheese

Put beef in a large skillet and cook over medium heat, keep stirring till the pink colour fades and it has crumbled.

Drain and stir in paste sauce

Lightly grease a baking dish and spread 1/3 of meat (the meat with sauce) in it. Layer with three noodles, 1/2 of each ricotta cheese (make the ricotta cheese layer thin) and mozzarella cheese in that order.

Repeat the same procedure with the remaining 3 noodles, ricotta cheese and mozzarella cheese, spread the remaining meat (the meat with sauce) over mozzarella cheese.

Pour hot water around dish edge slowly.

Cover the baking dish tightly with aluminium foil (heavy duty recommended).

Bake for 45 minutes at 375°.

Uncover, bake for more 10 minutes and let it stand for 10 minutes then serve.

Sweet Hot Mustard Chicken Thighs recipe

Yield:  8 chicken thighs (8 servings)

What you need:

8 bone-in, skin-on chicken thighs

Marinade:

½ cup Dijon mustard (or any other type of sweet hot mustard)

1 teaspoon dry mustard powder

1 teaspoon salt

¼  cup  packed brown sugar

¼ cup red wine vinegar

4 cloves of garlic, minced

½ teaspoon ground dried chipotle pepper

1 teaspoon ground black pepper
1 pinch Cayenne pepper

Baking:

1 onion, sliced into ½-inch rings
Cooking spray/ vegetable oil

  1. Using a sharp knife make two slashes clockwise into the skin and meat of each chicken thigh to the bone. Each cut should be around 1 inch.
  2. Transfer the thighs into a plastic resealable bag.
  3. Mix vinegar, garlic, mustard, mustard powder, chipotle pepper,   black pepper, salt, brown sugar  and cayenne in one  bowl and Whisk until smooth.
  4. Pour the mixture (now ready marinade) into the bag with the thighs. Squeeze the bag while working the marinade over the thighs and into every cut to make sure they are fully and well coated. Seal the bag and leave it in the fridge for at least four hours or overnight (overnight is recommended for the best flavour)
  5. When you are ready to bake, move a rack to the centre of the oven. Preheat the oven to 450°. Line a baking sheet with aluminium foil and spray the foil using the cooking spray ( or slightly oil it with vegetable oil)
  6. Put the onion rings on foil in a single layer, and then place the chicken thighs on top of the rings, cut side up. Spray or brush each thigh lightly with vegetable oil then sprinkle them with salt and additional cayenne (optional)
  7. Bake in the preheated oven for 35 to 45 minutes, until the skin is browned well, meat is tender, and juices run clear.
  8. Move the chicken and onions onto a serving platter. Pour pan drippings into a saucepan, bring to a boil while stirring frequently till drippings are reduced by half ( 3 to 4 minutes) then skim excess fat from pan sauce ( this is done to add richness)
  9. Spoon reduced pan sauce over each the chicken thigh and serve. (provide a spoon for the sauce)

3 teaspoons olive oil

1 teaspoon chopped fresh thyme

8 cups sliced onion

3/4 cup (3 ounces) shredded fontina cheese, divided

1 1/2 ounces pancetta (Italian-style bacon) or Canadian bacon, chopped

Cracked black pepper (optional)

1 Thyme sprigs (optional)

1 cooking spray

Directions for the Dough:

  1. Dissolve both the yeast and sugar in 3/ 4 cup of water and leave it to stand for 5 minutes.

  3. Add salt, oil and 2 cups of flour into yeast mixture and stir to make soft dough.
  4. Flour your surface lightly. Turn the dough out and place it on the floured surface then knead it until it its smooth and elastic.
  1. To prevent the dough from sticking on the surface, add adequate amount of the remaining flour (add a teaspoonful at a time).
  2. Coat a large bowl with cooking spray; place the dough in it, turning it on coat top
  3. Cover the dough and let it rise in a warm place (85°) that is free from drafts for 40 minutes or till it has doubled in bulk.
  1. Gently punch dough down.
  2. Again cover it and let it rise 40 minutes or till it has doubled in bulk
  3. Divide dough into 2 (both portions must be equal); roll each portion on a lightly floured surface to make a 9-inch circle
  4. Place dough circles on a large baking sheet coated with cooking spray and allow them to rest for around 10 minutes

 

Directions for PIZZA:

  1. As the dough is rising for the second time, put a non-stick skillet over medium-high heat temperature, add 1 teaspoon olive oil in and heat; add pancetta, and sauté for 2 minutes.
  2. Add onions, thyme, salt and white pepper then cook 25 minutes or until onions are browned, keep stirring.
  3. Preheat oven to 475°.
  4. Brush each of the prepared pizza crust with 1 1/2 teaspoons of oil then top each with half of onion mixture.
  5. Sprinkle half of cheese over each of the pizzas.
  6. Bake at 475°for 9 minutes or till the crusts are crisp.
  7. Slice each pizza into 8 wedges.
  8. Garnish with thyme sprigs and sprinkle with black pepper (optional)
