  1. Preheat oven to the desired degree. Cover 2 rimmed baking sheets with olive oil. Place a meat grinder and a large bowl in the freezer to chill.
  2. Grind together fennel seeds and peppercorns using pestle or a mortal then transfer to a medium bowl and stir in salt; set spice mixture aside.
  3. If grinding your own meat, pass chicken through a grinder fitted with a coarse plate directly into chilled bowl; if your meat is already ground, place chicken in chilled bowl.
  4. Place, fatback, bread, parsley, and garlic in bowl with spice mixture; pass through grinder into bowl with chicken. Add wine and eggs; using your hands, gently mix until well incorporated.
  5. Heat a small skillet over medium heat.
  6. Spread a pinch of chicken mixture into a small disk and cook in skillet, for tasting. Season chicken mixture with salt, (optional).
  7. Form chicken mixture into 1-inch balls and place on prepared baking sheets.
  8. Transfer baking sheets to oven and roast, turning baking sheets halfway through, until meatballs are lightly browned and cooked through, 18 to 20 minutes.

  7. Clean the pan, put it back on the burner and heat it under high heat until it’s very hot. Pour the remaining oil and wait until it’s almost smoking.  Add green onions and mix, sauté for 15 seconds, add the day old prepared rice (or the leftover rice) and mix thoroughly.  Spread the mixture on the pan and fry for 2 minutes or until the rice starts to sizzle.
  8. Using a spatula toss the rice and spread it once more.
  9. Pour the soy sauce around the rice and mix.
  10. Add shrimp eggs mixture, peas, carrots and sesame oil as you stir to mix them.
  11. Heat until sizzling hot.

Seal the bag and leave it in the fridge for at least four hours or overnight (overnight is recommended for the best flavour)
  5. When you are ready to bake, move a rack to the centre of the oven. Preheat the oven to 450°. Line a baking sheet with aluminium foil and spray the foil using the cooking spray ( or slightly oil it with vegetable oil)
  6. Put the onion rings on foil in a single layer, and then place the chicken thighs on top of the rings, cut side up. Spray or brush each thigh lightly with vegetable oil then sprinkle them with salt and additional cayenne (optional)
  7. Bake in the preheated oven for 35 to 45 minutes, until the skin is browned well, meat is tender, and juices run clear.
  8. Move the chicken and onions onto a serving platter. Pour pan drippings into a saucepan, bring to a boil while stirring frequently till drippings are reduced by half ( 3 to 4 minutes) then skim excess fat from pan sauce ( this is done to add richness)

  2. Again cover it and let it rise 40 minutes or till it has doubled in bulk
  3. Divide dough into 2 (both portions must be equal); roll each portion on a lightly floured surface to make a 9-inch circle
